Ok, so by now everyone should know that I’m preggo. I guess because this is #3, it’s become impossible to fly under the radar to those who see me every day. At less than two months, I have already ballooned to the size I was at 4 months with Alden and Kato. (I have been assured it is not twins, which was such a relief that I don’t mind the super-sizing).

As with the previous two rounds, my appetite has been for all things unhealthy. Salami and bacon top the list. Coke is also up there (so much so that Ann, who looks after the kids for us, knew I was preggo long before we told her because she noticed I was drinking Coke, which I never ordinarily do). And Chicken McNuggets. I know, I know. I live in fear that I will run into my OB at the supermarket (or worse, at McDonald’s).

This morning I was craving bacon so heartily that I pulled out all the stops. I wrote our friend Christian an early morning email requesting (nay, demanding) his recipe for broiled brown sugar bacon. Turns out, the recipe is quite simple. But it might just be the most delicious thing you’ve ever eaten. So pay attention! You’ll need:

Thick-cut bacon
Brown sugar
Cayenne pepper

That’s it! Dredge the bacon in the brown sugar. Sprinkle with a tiny bit of cayenne pepper (I’m not usually one for spicy, but a little hint really catapults this recipe into manna territory). Put in the broiler for 5-7 minutes. Flip the bacon, and broil for 5-7 more minutes. Basically, you’ve just made bacon candy.

Keep a close eye on things because they very quickly go from not done to doneandsuperextracharcoalcrispy (so says Christian). Evidenced by the piece on the right.

Pair with some juicy pears, and you have a delicious breakfast (or dessert!).

Oh, but make sure that you don’t make this recipe in your grandmother’s favorite broiler pan. It occurred to me (thankfully) as I was about to put it in the oven. I switched pans and added some tin foil.

Grandma, her broiler pan, and my dishwasher (Matthew) are all thanking me now.

For those of your curious about the bump –

it really can’t be called a bump anymore. It’s more of a mass, a hummock, a drumlin. Please take into consideration that this photo was taken after ingesting six pieces of bacon, a pear, some potato chips and a half a can of coke I found on the counter this morning.
